Pancakes (makes approx. 15-20 depending on size)
225g 8 oz Self-raising flour
55g 2 oz sugar
1 tsp heaped baking powder
5 tbsp sun flower oil
250 mls milk approx. (depending on thickness desired)
Mix all wet ingredients into a large jug, then sieve all dry ingredients into the wet and mix well to make a smooth batter. Leave to thicken approximately 10 minutes. Pre heat the griddle / pan and lightly rub with a little sunflower oil. Using a large tablespoon pour spoonfuls around the surface of the griddle or simmering plate. Cook one side till bubbles appear then flip over and cook the other.
Keep warn in a clean tea towel and serve with maple syrup, honey or your favourite topping (I love fruit compote – see here for recipe – and Greek yoghurt).
